Cashew Cheese
It’s easy as cheesy.
INGREDIENTS
150 gr cashew nuts, soaked overnight (or if you forgot: cook 1l of water and pour it over the nuts and let them soak for 15-30 minutes) and drained
2 cloves of garlic
2 tbsp of lemon juice
2-3 tbsp of water (if needed)
1/4 tsp of sea salt
2 tbsp of nutricional yeast (use gluten free if needed)
A dash of pepper
Dried herbs of your choice, like thyme, rosemary, pink pepper, … of your choice
PREPARATION
Mix all ingredients except for the water in a power blender. Depending on the structure, add up to 3 tbsp of water. The cheese should be firm and well blended.
Make a sausage of your cheese, or put it in a serving ring with baking paper. Make it firm.
If you choose to make a sausage: on a cutting board, spread out your herbs. Roll the sausage over it. Pack firmly in plastic foil and let cool for a night in the fridge.
If you choose the baking paper, spread out your herbs over the cheese. Keep in the fridge overnight.
