Arepa’s with grilled vegetables and Cheddar

Bring some latin flavor to the table please!

INGREDIENTS

for the arepas

1 cup of preboiled corn meal

1 cup & 1 tbsp of water

1/2 tsp of salt

for the grilled vegetables (you can choose as you please of course)

20 slices of zucchini

2 carrots in thin slices

1 tomato quartered

half a red onion, thinly sliced

100 gr of pumpkin, or even papaya in cubes of 2x2 cm

some spicy sauce

on the side

one slice of cheddar

PREPARATION

In a mixing bowl, mix the dry ingredients. Add the water and give it a couple of stirs with a wooden spoon, but don’t overdo it. Let rest for at least ten minutes.

Heat a grill pan to medium high heat (I use 7 out of 9 on an induction stove).

Roll small balls of the arepa dough (about 5 cm diameter) and press them between the palms of your hands. Put in the grill pan and bake on each side for about 15 minutes.

Arrange all vegetables in a baking tray. Season with pepper and salt. Add some spicy sauce to the carrots. You can season each vegetable separately too of course. Spray with olive oil.

Put the grill on the highest stand and grill for about 20 minutes.

Serve the arepas with the grilled vegetables and a slice of cheddar.
