Sundried tomatoes

You will want a batch of these at all times.

INGREDIENTS

  • About 1 kg of tomatoes

  • 1 tbsp of flakes of sea salt

  • About 3 tbsp of Olive oil, for spraying

  • 1 tbsp of freshly cut oregano, thyme and/or rosemary to your liking

PREPARATION

Step 1. Preheat and prep

Preheat the oven to 120°C fan (I use fan to demoist quicker, it’s a game changer). Cut the tomatoes in half and spread them on a baking tray lined with parchment.

Step 2. Salt, Herb, and Oil

Sprinkle the salt over the tomatoes. If you want, add your freshly cut herbs now—scatter them over the top. Give every tomato half a good spray of olive oil.

Step 3. Slow roast and relax

Let them slowly dry in the oven for 2 hours (for small tomatoes) to 3.5 hours (for large tomatoes). You can let them cool down in the oven when they're done, so there is no need to stick around, go enjoy your life!
