Dragon Fruit & Pear Salad
A crisp, vibrant, sweet-and-sour salad that proves greens don't have to be boring. Dragon fruit, juicy pear, and tangy pickled veggies dressed in a zesty agave-mustard drizzle—brunch perfection in 5 minutes.
ingredients
1 handful of fresh greens — spinach, rocket, or whatever salad leaves you have in the fridge. 5 to 8 radishes — thinly sliced. 20 slices of pickled cucumber — check out our pickling guide in Zine 3 if you need a refresher. 1 small mound of pickled red onion. 1 ripe pear. 1 dragon fruit — for that show-stopping tropical pop. 1 tbsp of whole grain mustard. 1 tbsp of extra virgin olive oil. 1 tbsp of agave syrup. 1 tbsp of fresh lime juice. 1 tbsp of toasted sesame seeds — for garnishing.
THE SALAD & DRESSING
Tear or slice your salad greens into bite-sized strips and arrange them as a bed on a large serving dish.
Peel and chop the pear and dragon fruit into neat 2x2 cm cubes.
Toss the fruit blocks, radish slices, pickled cucumbers, and pickled red onions generously over the bed of greens.
In a small cup, whisk together the olive oil, whole grain mustard, lime juice, and agave syrup until emulsified into a glossy dressing.
Drizzle the dressing over the salad, sprinkle with toasted sesame seeds, and serve immediately
