Crunchy Apple Mint Salad

Think salads are boring? Think again, because this one uses up your old, sad bread and turns it into crispy croutons that will make you forget you're eating a salad.

INGREDIENTS

1 granny smith apple.

A handful of rucola.

½ of a cucumbersliced nicely.

2 slices of old breaddon't you dare throw it away.

3 or 4 branches of fresh mint.

3 tbsp of yogurt.

Lemon juice.

Olive oil.

Pepper and salt.

THE PREP

  1. Cut your granny smith apple into four pieces, aggressively cut out the heart, and slice it thinly.

  2. Tear the rucola with your bare hands and dress it on a plate. Throw the sliced cucumber on there too.

  3. Take your old bread and cut it into 2x2 cm cubes. Sprinkle them generously with olive oil and pop them in the airfryer for 8 minutes at 180°C. Toss these warm, crispy bad boys onto the salad.

  4. Top the whole thing with your sliced apples.

  5. For the dressing: slice the mint very thinly, and mix it into the yogurt along with pepper, salt, a splash of olive oil, and the lemon juice. Drizzle it over the top and devour!
