Charred watermelon Steaks

Putting fruit on the grill? Absolutely. When you marinate thick slabs of watermelon and sear them on a smoking hot grill pan, something magical happens—it turns savory, smoky, and dangerously juicy.

ingredients

1 large watermelon — sliced into thick, meaty slabs. 2 tbsp of olive oil. 2 cloves of garlic — crushed. 1 tbsp of soy sauce (or tamari). 1 tbsp of HP sauce or BBQ sauce. ½ tsp of smoked paprika/peppers. ¼ tsp of salt & ¼ tsp of black pepper.

The steaks

  1. Slice the watermelon in half, then cut into round slices about 3 cm thick. Trim off the green rind to create rectangular "steaks". Arrange them on a plate and let them rest in the fridge overnight.

  2. Whisk together the olive oil, crushed garlic, soy sauce, HP/BBQ sauce, smoked pepper, salt, and black pepper until well mixed into a marinade.

  3. Preheat a grill pan over medium-high heat.

  4. Brush one side of each watermelon steak generously with marinade and lay it brushed-side-down in the hot pan.

  5. While the bottom sears, brush the top side with the remaining marinade.

  6. Grill for 10 to 15 minutes until deep grill marks form and the edges caramelize. Serve piping hot!
