Bagels with tomatoes and Rosemary

If you thought bagels were boring, I’m never talking to you again.

INGREDIENTS

per serving

one bagel (see our bagel recipe). If you’ve frozen them let it defrost for about an hour and a half

1 slice of mozzarella or more if you want to go dirty. See the recipe.

about 12 cherry tomatoes in halves or a big tomato sliced

olive oil (preferably in a spray*)

pepper and salt

fresh rosemary

PREPARATION

Preheat your oven to 180C

Slice your bagel in halves and put it on a oven safe dish or in a baking tray

Put the mozzarella on, then the sliced tomatoes. Add pepper and salt, and a generous amount of fresh rosemary.

Spray the bottom part and the naked top part with olive oil.

Put the bottom part in the oven for 20 minutes, add the top part afterwards for another five minutes.

Serve hot


*Don’t you ever buy one of those expensive olive oil sprays in the supermarket again. Buy a plant spray instead and fill it will olive oil. Will do the same trick and you’ll reduce waste.
