American pancakes with hot chocolate sauce

OK, so this is a quickie for any weekend day. Or if you’re an early bird: even for every working day. Let’s Make American Pancakes Great Again*

The Pancakes

INGREDIENTS

150 gr of self-raising flour

1/2 tsp of baking powder

1/2 tbsp of sugar

optional: 1/2 tbsp of vanilla extract

a pinch of salt

200 ml plant-based milk (side note on the milk: Scruffy prefers a fat milk. Soy will do, but you’ll make your pancakes extra creamy if you, for example, use a barista plant-based milk like Oatly has)

neutral vegetable oil for baking (sunflower, rapeseed, coconut,…), or even better: plant-based butter

WHISK, BAKE, EASY AS 1,2,3

  1. Whisk all the dry ingredients with the vanilla extract. Slowly pour in the milk until you get a smooth, thick batter. If you have power blender, you can make this dough in it though. Don’t leave it too long before you bake though, because it will start rising on room temperature.

  2. Heat a little of the vegan butter or vegetable oil in a non-stick frying pan over a medium-low heat, and add 2 tbsp batter into the pan at a time to make small, round pancakes. Cook for 3-4 mins until the edges are set, and bubbles are appearing on the surface. Flip the pancakes op into er and cook for another 2-3 mins until golden on both sides and cooked through. You can keep them warm under a kitchen towel while you bake the other ones, or in the oven on 80C.

The Chocolate Sauce

INGREDIENTS

125 ml of vegan whippable cream (note that cooking cream will stiffen quicker)

60 gr of chopped good dark chocolate, preferably meant to melt

ONLY BELGIAN UNDERSTAND THE IMPORTANCE OF A GOOD CHOCOLATE SAUCE

  1. In a small pan, slowly heat the cream until it’s boiling.

  2. Turn of the heat and add the chocolate. Now whisk with all the energy you have this early in the morning until all the chocolate is melted.

  3. Pour over the pancakes as much as you like. If you prefer the spotty servings like Scruffy makes them, dip your whisk in the chocolate sauce and give some good swings over a staple of pancakes. Pretty sure some will lick the drips from the kitchen counter and wall.
