Double baked Chocolate dipped Banana Bread
Never ever will you have left over banana bread, I swear.
INGREDIENTS
half a loaf of this banana bread
milk to soak the bread
1 tbsp of corn starch
50 ml milk
60 gr of dark chocolate
some butter or oil
PREPARATION
break the banana bread into small pieces into a bowl and add milk until all pieces are just covered.
Meanwhile make the chocolate glazing. heat 50ml of milk until boiling. turn of the heat and add the chocolate. mix until all is melted.
add the tablespoon of corn starch to the bread mix and mix well.
now take a 28cm pan and turn on medium heat. add some butter or oil to bake. pour in the banana bread mix and cover with a lid. check regularly. when the sides start to become dry, flip over (best trick is to gently make all the sides loose, then put a plate or big cutting board on top of the pan and turn around, then slide the cake back in with the unbaked side at the bottom)
let bake for another couple of minutes until firm.
remove from heat and spread the chocolate glazing on top of it. eat lukewarm with your hands, so you can lick your fingers after.
