Banana Bread
Never ever will you throw away a black banana again. Repeat after me.
INGREDIENTS
3 large black bananas
75 ml vegetable oil
100 gr brown sugar
225 gr all purpose flour
3 heaped tsp of baking powder
3 tsp of cinnamon
Nuts if your nutty
PREPARATION
Heat oven to 200C conventional / 180C fan. Peel the bananas and mash with a fork or in your kitchen robot. Mix with the oil and the brown sugar.
Add the plain flour, 3 heaped tsp baking powder and 3 tsp cinnamon, and combine well. Add 50g nuts, if using.
Put baking paper in a 30 cm loaf tin, pour out batter and bake for 20 minutes. Check and cover with aluminium foil if the cake is browning.
Bake for another 20 minutes, or until a skewer comes out clean.
Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after. Don’t slice what you’re not going to eat.
