Pumpkin marmalade

There’s pumpkin all year round in Lanzarote, so we’d had to come up with plenty of recipes.

INGREDIENTS

4 cups Pumpkin, cooked (see note)

2 cups granulated sugar

2 peeled oranges zest removed, and cut into segments, alternatively 4 tbsp of lemon zest

PREPARATION

Preheat your oven to 180C.

Peel and cut your pumpkin into pieces (about 4 x 2 x 2 cm). Tossle them in a baking tray and put in the oven for 40 minutes.

Combine the sugar, pumpkin, oranges or lemon juice in a big pot and gently bring to boil. Keep simmering for about 35 minutes. Stir occasionally.

After 35 minutes mash or use a hand mixer to make smooth. Pour into sterilized jars. Label with your favorite Halloween character.
