Cold Coconut tomato soup
Easy does it. And you will surprise people beyond any doubt.
INGREDIENTS
250 g of ripe tomatoes
1/2 cucumber
1/2 tbsp of spicy smoked paprika powder
1 can of coconut oil
1 tbsp of lime juice
1 clove of garlic (more if you want to)
Pepper and salt as pleased
Parsley
Optional 1/2 (red) onion
PREPARATION
Keep a small bit of cucumber and the parsley aside.
In a blender, mix all the other ingredients to a smooth soup. Cool in the fridge for the best taste.
Cut a bit of cucumber into very small pieces. Decorate the soup with the cucumber and parsley.
