Coffee Tiramisu
One crazy good dessert. This vegan tiramisu looks ridiculously fancy but uses a magic whipped coffee mousse and store-bought Biscoff cookies.
INGREDIENTS
For the coffee mousse
3 tbsp of instant coffee.
3 tbsp of sugar.
3 tbsp of hot water.
1 tsp of vanilla extract.
8 tbsp of soy or coconut yoghurt.
8 speculoos / Biscoff cookies.
For the chocolate glazing
80 ml of soy milk.
120 g of dark chocolate — check the label to make sure milk didn't slip in!.
PREPARATION
THE CHOCOLATE GLAZE
Start by making the chocolate glazing. Heat the 80 ml of soy milk in a small saucepan.
Turn the heat down low and add the dark chocolate.
Remove the pan from the heat and stir vigorously with a fork until the chocolate has completely melted and dissolved.
Let the mixture cool and set for 15 to 20 minutes. Patience is a virtue.
THE MOUSSE & ASSEMBLY
Add your instant coffee, sugar, and hot water to a mixing bowl.
Mix it on high speed and watch the magic happen. When the mixture magically becomes thick and fluffy, fold in the vanilla extract.
Now let's layer! Grab four nice glasses. Put a layer of yoghurt at the bottom of each glass.
Toss two Biscoff cookies into each glass.
Spoon a generous layer of your magic coffee mousse over the cookies.
When the chocolate glazing is cool enough, gently pour it right over the coffee mousse.
Set the glasses in the fridge to stiffen up before serving.
