Crispy Lentil tofu Salad

This salad will bring all the boys and girls to the yard!

INGREDIENTS

  • 2 cups of greens of your choice (like salad or rucola)

  • 8 halves of sundried tomatoes

  • 200 gr of lentil tofu

  • Some olive oil to spray

  • 1 tbsp of seeds of your choice—I used linseed/flaxseed!

  • 1 tbsp of yoghurt

  • 1 tbsp of tahini

  • 1 tsp of agave

PREPARATION

Step 1. Get the tofu crispy

Slice the tofu, spray it lightly with olive oil, and make it beautifully crispy! Your options are an air fryer (180°C, about 15 minutes) or your oven grill. You want golden edges and a great bite.

Step 2. The salad base

Cut the salad or tear the leaves of the rucola and arrange them artfully on a plate. Add the sundried tomatoes.

Step 3. The Dressing Power-Up

Time for the dressing! Mix the agave, tahini, and yoghurt until it's smooth and creamy.

Step 4. Assemble and Shine

Add the crispy tofu to the salad, finish it all off with the dressing, and then sprinkle those lovely seeds on top. A fifteen-minute masterpiece!
